1. Select the Perfect Snack Sticks

Choosing the perfect snack sticks can be tricky.

You may end up having a bad batch of sticks if you are not careful enough.

Though the snack sticks you will find in your local store are perfectly edible, you have to make sure that they are okay.

The easiest way to ensure that is by checking the expiry date.

Remember, you should never use any food product that is close to its expiry date or is already expired.

2. Set Up the Smoker

We have already discussed how you can set up your Masterbuilt smoker in the perfect way.

The prominent thing to do here is pre-smoking the smoker.

The process is to just spray vegetable oil inside of the smoker and turn it on in the maximum setting.

As you will have to keep it like this for two hours, you have to do it even before you prepare the snack sticks.

3. Prepare the Snack Sticks

If you choose to use the pre-processed snack sticks then you can just take them out of the packet and put them inside of the smoker.

However, if you want to make the snack sticks by yourself, you can do that as well.

In fact, making the snack sticks at home is a more plausible option. This gives your food a fresh taste.

To make the snack stick at home you will need,

  • Ground meat – 2 ½ lbs
  • Coldwater – 1 cup
  • Brown sugar – 3 tablespoons
  • Kosher salt – 1 tablespoon
  • Onion flakes – 1 tablespoon
  • Granulated garlic – 1 ¼ teaspoon
  • Black pepper – 1 ¼ teaspoon
  • Dry mustard – ½ teaspoon
  • Chili Flakes – to taste

Take a bowl and put everything in except for the meat and prepare the mixture.

When the ingredients are mixed well, put the meat in and marinate it for half an hour.

After that take the meat and make it stick-shaped. And after that, they are ready to cook.

4. Placing the Snack Stick

Placing the snack stick perfectly inside determines how your snack stick will taste like. It is a mandatory but simple process.

Arrange the grill mats inside of the smoker first. Open the smoker and palace the grill mat in their place.

A crucial thing to remember here is, as your smoker will be pre-smoked and functioning, smoke and heat will gush out as soon as you open the smoker gate to place the meat.

And you can’t keep the door open for a long time, because that will cause all the flavor to escape with the smoke.

So oil the grill mat, place the snack sticks on top and slide it in the smoker as quickly as you can.

Use a mask, so that the smoke doesn’t affect you. And do not forget to wear rubber gloves as well.

5. Cooking the Snack Sticks

When it comes to cooking, people have their own style. And the whole process basically depends on the type and amount of food you are cooking.

In the case of smoking snack sticks, most people cook at 120℃ for about 2 hours.

And after that, you need to increase the internal temperature to 130℃ and cook it for 30 minutes.

You need to keep increasing the temperature by 10℃ every 30 minutes till the internal temperature reaches 170℃.

In the case of a few sticks, the whole cooking process can take 4 to 6 hours.

However, if the snack sticks are too thick, they may require more time to cook.

And after that, you are done.

Take out the grill mat with the snack sticks (don’t forget to wear rubber gloves) and serve the smokey, juicy, and tender snack sticks.

It may have taken an hour but once you taste the flavor and aroma of the meat, you will realize that it was worth it.
